The Ingredients library is the foundation of food cost and allergen compliance. Build it once and the rest of Manager computes itself.
What you track per ingredient#
- Name
- The working name you use internally.
- Commercial name
- An optional supplier-facing or label name.
- Unit
- The unit costs and quantities are expressed in.
- Cost per unit
- Drives food-cost and margin calculations.
- Stock & low threshold
- Current quantity and the level that flags 'low'.
- Supplier
- Who you buy it from.
- Allergens
- EU-14 tags — the source of truth for the allergen matrix.
The EU-14 allergens#
Tag each ingredient with any of the 14 declarable EU allergens: Gluten, Crustaceans, Eggs, Fish, Peanuts, Soy, Milk, Tree nuts, Celery, Mustard, Sesame, Sulphites, Lupin and Molluscs.
Usage and presets#
- Each ingredient shows a usage count — *used in N menu items* — so you know what a change affects.
- Instantiate common ingredients from a global preset catalogue instead of typing from scratch.
- Archive ingredients you no longer use; they soft-delete and can be restored.
Tip
Set cost per unit on every ingredient before opening Financials — food cost can only be as complete as your ingredient costs.
